Hey y’all, I’m Ashley! I’m an occupational therapist, plant based foodie, runner, and mindfulness enthuthiast living in Charlotte with my fur babies. I enjoy all things outside, traveling, and spending time with friends and family.
I started my transition to a plant based diet in 2007, and slowly have eliminated all animal products from my diet for a variety of reasons. My passion for making and sharing plant based recipes was born out of my own need to fuel marathon training and an overall active lifestyle without compromising my health.
As a vegan, I’ve run 4 marathons and completed many half marathons and endurance events. I enjoy combining my love for plant based nutrition and mindfulness to create easy and nourishing recipes to fuel an active lifestyle. While studying plant based nutrition through Cornell University, I’ve learned how to select high quality ingredients to create well balanced meals and recipes that provide my body with what it needs without restricting or feeling like I’m “missing out” on the classics.
I’ve completed various trainings to gain certifications in plant based nutrition and mindfulness. My hope is to create and demonstrate accessible and approachable plant based recipes that you’ll actually make and better yet - enjoy - all while adding a healthy mix of greens to your life.
