No Bake Pumpkin Spice Latte Protein Bites

Vegan, gluten free, oil free, nut free
Ingredients:
1 cup oat flour (use GF if needed)
1 cup vanilla protein powder
2 tbsp coconut sugar
1 tbsp pumpkin pie spice
½ cup pumpkin puree
1 tsp vanilla
¼ cup almond butter
¼ cup maple syrup
1 tbsp almond milk
Optional: cinnamon / sugar to roll bites in
First mix the dry ingredients in a large bowl
Then add almond butter and maple syrup to a microwave safe bowl, microwave for approximately 30 seconds and whisk together
Add vanilla, pumpkin puree, and almond milk to wet ingredients, mix well
Combine wet and dry ingredients, mix until smooth
Use an ice-cream scooper to scoop out the dough in equal amounts, roll into balls, and roll in cinnamon sugar
Place on a baking sheet or large plate and refrigerate for at least 20 minutes to set
Store in an airtight container in the refrigerator
