Single Serving Dark Chocolate Protein Waffle

Vegan, Gluten Free, Oil Free, Nut Free


1/4 cup nondairy milk

1/4 cup chickpea flour 

1 tbsp coconut flour 

1 tbsp tapioca flour 

1 tbsp dark cocoa powder (could use regular)

1 tbsp coconut sugar 

2 tbsp applesauce 

1/2 tsp baking powder 

Pinch of salt 


  1. Preheat your waffle iron on medium/high setting 
  2. Whisk together all the dry ingredients (chickpea flour, coconut flour, tapioca flour, cocoa powder, coconut sugar, baking powder) until well blended 
  3. Add in wet ingredients (almond milk, applesauce) and mix until smooth 
  4. If needed, spray your waffle iron with a non-stick spray 
  5. Pour batter into the center of your waffle iron – don’t spread it out, you want a nice thick waffle
  6. Cook 5-8 minutes, or until you don’t see any steam coming out of the sides

Pro Tips: 

  • Prep the dry ingredients ahead of time in single serve baggies so they’re ready to go whenever you want a waffle
  • Top with almond butter and fruit, chocolate chips, maple syrup, or vegan butter 
  • Try to use a thicker non-dairy milk, the thinner ones don’t work quite as well
