Single Serving Dark Chocolate Protein Waffle

Vegan, Gluten Free, Oil Free, Nut Free
Ingredients:
1/4 cup nondairy milk
1/4 cup chickpea flour
1 tbsp coconut flour
1 tbsp tapioca flour
1 tbsp dark cocoa powder (could use regular)
1 tbsp coconut sugar
2 tbsp applesauce
1/2 tsp baking powder
Pinch of salt
Directions:
- Preheat your waffle iron on medium/high setting
- Whisk together all the dry ingredients (chickpea flour, coconut flour, tapioca flour, cocoa powder, coconut sugar, baking powder) until well blended
- Add in wet ingredients (almond milk, applesauce) and mix until smooth
- If needed, spray your waffle iron with a non-stick spray
- Pour batter into the center of your waffle iron – don’t spread it out, you want a nice thick waffle
- Cook 5-8 minutes, or until you don’t see any steam coming out of the sides
Pro Tips:
- Prep the dry ingredients ahead of time in single serve baggies so they’re ready to go whenever you want a waffle
- Top with almond butter and fruit, chocolate chips, maple syrup, or vegan butter
- Try to use a thicker non-dairy milk, the thinner ones don’t work quite as well
